Table - sortable demo servers column sorting is incorrect

Describe the enhancement or change
From the 9/16/2024 design share session, there was a question brought up regarding the PF sortable table demo. Basically it seems like when the "Servers" column is sorted in ascending order, the column is actually sorting in a sort of reverse alphabetical order ("US-Node-1" comes first instead of "Bangalore-Node 1"). The other columns sort in the expected order based on the sort type.

As part of this we should take stock of other sortable demos/examples to ensure they're sorting correctly as expected (ignoring columns that don't utilize text, i.e. a "favorites" column that only has a star icon button; this will be handled by #11006)

Is this request originating from a Red Hat product team? If so, which ones and is there any sort of deadline for this enhancement?
