Allow selection of preferred IPFS gateway

Currently we use `cloudflare-ipfs` as the default gateway. Allow a simple selection (& save) of the preferred gateway and then on subsequent rounds always redirect to this one.

Needs resolution on #19 first, before selection (or work in parallel)
