As long as all your instances of Postal are looking at the same database and you have done something to address all the IP addresses that the workers use so the DNS lines up then you can have as many copies of Postal as you want.

I can confirm that we are running high availability postal servers on AWS, EC2 behind a Network Load Balancer, they both are configured to use and RDS instance and it works really well.
