Is your feature request related to a problem? Please describe.
This is not a problem or a bug. A new model just released, and it would be good if we could update to use the new model. The current model being used in the config file will be deprecated soon.

Switch to the new granite-3-8b-instruct model from IBM as it was recently released: https://www.ibm.com/products/watsonx-ai/foundation-models
