No Data is Saving

I'm not sure what is going on but my data is not saving in the data folder. I've checked logs and cannot see any errors with saving data. I also looked at the docs but am not seeing anything about saving data. Maybe I am missing something. When I take the docker container down and redeploy it, all my data is lost. Is anyone else having this issue?
