Handle extracting SDK version from components when packaging also in non standard component structures

Right now, we look for the version in the go.mod file in the current repo or look for an sdk tag. This doesn't always work as some components, like the data-enricher-frontend have a non standard structure https://github.com/smithy-security/private-components/actions/runs/15016354483/job/42195103040. This should be fixed.
