Feature request for Iceberg table auto-creation and improved semi-structured schema handling

Hello,

maybe the following points are already present in the upcoming release milestones, by the way I would like to propose the addition of the following configuration properties:

• Enabling table auto-creation on the destination schema
• Enabling schema columns creation as optional during table creation and evolution (avoiding error on missing fields)

When upcoming V3 schema will be released:

• Enabling iceberg variant RECORD_CONTENT and RECORD_METADATA (Variant Data Type Support apache/iceberg#10392)

All the above would make the ingestion of new topics of semi-structured data much more easy.
