Rename data/shapes/taxonomy

To implement the permanent URLs, we need to change file names

catalog/catalog-data.ttl -> catalog/data
catalog/catalog-shacl.ttl -> catalog/shapes
catalog/catalog-skos.ttl -> catalog/taxonomy

These changes need to happen

1. on the documents in the repo
2. in the package.json of the repo
3. in the scripts
4. on the pod

@elf-pavlik - shall I hold off on this until you've done your import?

.ttl is gitignored, I think you meant .shce

while renaming sounds like a good idea, we could keep file extensions in the repo and remove them in github action that will be updating the storage whenever it sets the Content-Type header.

you don't need to wait for me I can adjust my PR easily if yours gets merged first.

Oh yeah, I forgot about that. It is .gitignored but it will have to be created by git actions if we are going to have automated repo->pod. .shce is not used on the pod. On the pod, would catalog/shapes be the .shce and we'd still have catalog/shacl.ttl or some such for the scripts to access?

Yeah, I thought of that. It requires the repo->pod action script. Currently I update the pod manually and having the names the same is easier.

I don't mind if catalog/shapes be the generated turtle, we just need to make sure we set proper conent type.

Good point. And for that reason, I think I'll wait for the github-action to do the renaming (if any) because Otto's solid-file-client uses the filename suffixes to determine content type.
