Can I control the place generated json adapters at

for example I want to make them all in com.me.project.moshi.generated so that I can configure dokka to suppress showing them in the docs.

No. They have to be generated next to the class in the same package as that is how they are looked up at runtime.

I believe you should be able to exclude them by naming convention, or potentially the fact that they're beneath the build/ folder? Not sure.

filter by names do not work for me because generated files are in build/generated and there seems no way to suppress them individually.
but there is a way to restrict dokka only to scan the files in src/main/kotlin by writing

dokka {
    dokkaSourceSets {
        named("main") {
            sourceRoots.setFrom(file("src/main/kotlin"))
        }
    }
}
