Use the GOES extension

As requested stac-extensions/goes#1 (comment), as we've matured the goes-specific fields, we've consolidated them into a single extension: https://github.com/stac-extensions/goes. We should update this repository to use that extension, which will trigger a change in some of the goes: field values from kebab-case to snake_case.
