Missing EOPMetadata.xml asset in some sral-wat Items #24

Describe the bug
Some sral-wat archives contain an EOPMetadata.xml file that should be (but is currently not) included in the Item asset dictionary.
The example test data in this repo does not include an EOPMetadata.xml file. However, this file does exist in newer SEN3 archives.
To reproduce
Create an Item for a sral-wat archive that contains an EOPMetadata.xml file.
Expected behavior
Item assets should include an eop-metadata entry in an EOPMetadata.xml file exists.
