Refactor Pino Logger usage to allow any logger

Context

Any logger should be able to be passed into the prism createInstance as long as it has matching log levels

Current Behavior

Our current logger implementation is not generic and specifically requires a pino logger instance.

Expected Behavior

A user should be able to provide any logger, as long as it has the log levels needed by prism.

Possible Solution(s)

Create a logger contract in this library
