Bump galaxy.yml version when new release

Expected Behavior

When a new release is published, it's common practice to bump version in galaxy.yml as well.

Current Behavior

No version bump, still at version: 1.0.0

Possible Solution

When preparing for new release, up version number in galaxy.yml
