Phantom 1000 char limit

There is a phantom limit of 1000 characters. When we try to translate text greater than 1000 characters (around 1k, changes every time).
The app throws an error and the error surfaces to the UI showing "Language pair xxyy unavailable"
This maybe a limitation of Kotki

This is indeed a bug in kotki kroketio/kotki#8

A fix was proposed and this can be closed once the PR is merged kroketio/kotki#9

This has been mitigated temporarily on the Flathub release by flathub/dev.ters.LocalTranslate#11

I propose closing this issue as upstream doesn't seem to be responding.

We can also switch the flatpak manifest to use my fork of kotki for future maintenance
