Remove packethost dependency

There are 2 dependencies on packethost libraries: logging and X-Forward-For. We can replace the dependencies with in-package implementations or common libraries such as logr.

As part of this issue we should also address Gin logging that doesn't use the same format as the rest of Hegel logging.
