Alarm Panel

Sorry, I'm sure this is in here somewhere, but I've been looking for over an hour and can't find it.

I've successfully installed the ring-mqtt and logged in but I cannot figure out how to actually create a virtual alarm panel on my dashboard to let me control the alarm.

Can anyone please advise?

Assuming you mean for Home Assistant, it's just like any other card. Assuming you are seeing the entities being discovered in device, you just edit the dashboard, choose to add card, and add an alarm card with the correct entity, there's not much to it.

Maybe the issue I'm having is that I cannot find any of the alarm related entities.

I have the Ring MQTT installed and authenticated but when I go to Ring Devices I can still only see the cameras.

The devices in your screenshot are from the Home Assistant native Ring integration. As it's name implies, ring-mqtt uses MQTT, so it's devices show up under the MQTT integration.

I've installed the Mosquito MQTT Broker, not sure if I needed to. How do I get the devices to show up under the MQTT integration? Is there a tutorial that anyone knows of that I can follow? I'm new to most of this. When I look under integrations I don't even see Ring-MQTT but I do see the mosquito MQTT Broker but the only option it gives me is to configure and that's where I get lost.

That's because ring-mqtt is not an integration, it's an addon. Addons and integrations are completely different. The ring-mqtt addon connects to the mosquitto addon, and the MQTT integration connects to the mosquitto addon so that Home Assistant can see the messages ring-mqtt sends.

You need to install the mosquitto broker addon and configure the MQTT integration. There's literally about 1 million walkthroughs and videos and everythings else already out there on how to do this and I don't bother trying to document it here because the process changes on the HA side every now and then and I don't really use HA. Overall however, if you install the Mosquitto addon and then configure the MQTT integration (you can just accept all default) then it will work. You quite literally don't have to change anything and, if you don't really know what you are doing, that's the best thing to do.

So I got the devices to show up under MQTT, but I cannot, for the life of me figure out how to be able to change modes on the panel (Arm home, Arm Away, Disarm)

I saw some stuff on line where they linked this with the alarmo interface and I like the way that looked but I'm hitting a road block with trying to change modes.

That's not the alarm device, that is the keypad device, i.e. it is displaying the status of you physical keypad, just like you would see in the Ring app. Also, the device is offline/unavailable in this screenshot, so something isn't working. You can see in the logs on the right it went unavailable 18 minutes before you took this screenshot.
