Does enrichment_table configuration documentation need be elevated

Hi, having a go at enrichment of events using the file enrichment and noticed enrichment_tables have no consolidated documentation that is easily found and digested like a sink or transform.

Unless I have not found it, currently there is nothing in the documentation about how to configure an enrichment table other than the guide which makes mention of a few properties but no explanation of their impact...for example schema

Would it be worth elevating enrichment_tables configuration into the documentation as a first class citizen?

This could be improved by having a dedicated page per table type. But it will take a bit of work to get there.
