[Feat] Adding pgbackrest_version option

Problem

According to https://github.com/vitabaks/autobase/blob/2.4.1/automation/roles/common/defaults/main.yml there is no option to set the desired version for pgbackrest.
There is for pg_probackup or wal_g but not for pgbackrest.

Description

I would like to redeploy my cluster on fresh new dedicated servers while keeping the same pgbackrest version and I can't do that if the pgbackrest on my backup server doesn't match the one on the new servers.

This is problematic because the official PostgreSQL repository usually contains only the latest version of the package.
It will only work reliably if you maintain your own repository with the specific versions you need.

P.S. I switched from SSH-based backups to S3 for this very reason — to avoid compatibility issues between different pgBackRest versions.

Would it be technically possible to implement this by building pgbackrest from sources ? Like described here

Yes, we can. Except that it's slower than installing a package.
