[Request] Update vision model examples

Yes, the vision model examples are rather outdated and do not run without some tweaking.

Update all the current scripts to run, while also adding support for the latest Mistral Vision model.

Hi @T145 , the vision model examples are all only a couple months old, can you specify what you've had to update/tweak in order to get them to run?
