Add yaml for interaction endpoints

We need to add yaml for the interactions endpoints. In the 13/05/2025 call it was discussed that these could be added to the exchanges.yaml file.

When adding the yaml we need to remember to include the x-expectedCaller flags for each endpoints so the tables in the API Component Overview section are properly updates

In the works, should have a PR in for this by next meeting. Just working through a minor bug in the table generation for the endpoint tables
