Installation instructions need to be updated

The installation instructions are outdated, and could use the following updates:

1. Clearer instructions for dependency management (this library actually relies on some RCTConvert methods that live in react-native-maps
2. Adding auto-linking capabilities for React Native versions >= 0.61
