Feature Request: Mobile Testing

It would be really helpful is to set up testing for Android and iOS. We currently only have tests for Linux, Windows and macOS: https://github.com/Jigsaw-Code/outline-sdk/blob/main/.github/workflows/test.yml

It's not trivial to test on mobile, but other projects have managed to do it (Go Mobile, gio, Fyne, ...). It requires some investigation.
