The behavior of escaping delimiters in doc strings is not documented.

https://cucumber.io/docs/gherkin/reference#doc-strings does not mention anything about the behavior of escaping a delimiter inside the content of the doc string, while the [testdata](https://github.com/cucumber/gherkin/blob/main/testdata/good/docstrings.feature) enforces that parsers are supporting this.
