Switch Package Management from Poetry to uv #97

Current Issue:
The repository currently uses Poetry for package management. This issue proposes switching to uv as the package manager.
Reason for Proposal:
Performance: uv is significantly faster than Poetry and other traditional tools.
Efficiency: Offers improved dependency resolution and streamlined package installation.
Switching to uv could enhance the overall development experience and CI performance
