This PR refactors some existing classes to resolve split package issues in Apicurio Registry.

Note that even though these are technically breaking changes, especially for user facing libraries like the serdes, any application directly using this should fail at compilation time (only those that use reflection to access the class by package and name might fail at runtime, but the fix is pretty easy).
