These files can be used by Linux system distributors to create a desktop launcher and descriptive metadata for any Ironwail packages they may create; the initial use case for this would be my Flatpak distribution (cf. issue #241).
For reference for how this metadata looks when displayed, see e.g. the QuakeSpasm listing on flathub (a distribution which I also set up).
