test: add EKS add-on testing support

Description of changes:

• Allow passing a new flag, --addon, to run-tests.sh which causes the provider to be installed as an EKS add-on for testing (driver is bundled with the provider)
• Allow passing a --version flag to run-tests.sh to select which add-on version to test
• Make generate-test-files.py more concise and rename to test-manager.py
• Remove old integ testing files

Testing:
Ran integ tests locally--tests are passing locally, there are known issues with the GH workflow setup causing failures here
