Update GenAI docs for Gemini model deprecation

This PR updates the GenAI docs to change the Gemini example to a currently available model. Google deprecated gemini-1.5-pro and gemini-1.5-flash recently. https://ai.google.dev/gemini-api/docs/changelog#09-29-2025
