test: read delta-rs table with nullable add fields

wrote out the delta_rs_table with deltalake 0.25.2 (python) and observed scans/checkpoints on latest kernel are all working. additinally validated that the checkpoint schema of kernel/tests/data/delta-rs-table/_delta_log/00000000000000000000.checkpoint.parquet has all nullable add action fields.
