Updated Notebook with example of UMAP

The notebook PlotMNIST.ipynb was removed, because it was not working with the most recent versions of MLDatasets. Instead, as requested here #43 , I've implemented a working Pluto notebook instead.

Hello -

It's been a while. I'd like to merge this to preserve your contribution, though the notebook doesn't work as-is. I tested it out, and it looks like it needs some Conda.jl environment setup (to install Python umap).

There are Pluto notebooks automatically included in the Documentation where this could sit (docs/src/examples).
