[Entity Store] Enrich Entity Store Usage telemetry event

• Add additional detail to the Entity Store Usage telemetry event, including namespace information and entity-type metadata.
• Introduce a new Entity Store Health event along with a periodic task that gathers and reports component-health data (e.g., transforms, tasks, indices, and related components).
• Add new telemetry events for:
  • Snapshot task execution, covering both success and failure outcomes
  • Engine deletion (a creation event already exists)
  • Entity Store API calls, including both successful and failed requests
