Summary

Closes #244606

This PR replaces the usage of unflattenKnownApmEventFields with accessKnownApmEventFields in assistant function routes.

How to test

  • Go to Discover in Observability mode/space, and use the AI Assistant feature to do some workflow.
  • This should function the same as before.
  • CI should not regress
