Fix: Handle French special characters (é, è, à, ç) incorrectly returned as escape sequences ([e]) in JSON responses
Solution: Add character replacement logic before JSON parsing occurs
Impact: Ensures proper display of French text when using response_mime_type="application/json"
Resolves: Issue #591
