Ponyfills the @stream and @defer directives if not provided by GraphQL.js, and moves enum values over to using the new callback method.

Explicitly breaks graphql <= 16.9.0

…s `graphql@16.1.0-experimental-stream-defer.6`. `graphql@^16.9.0` should now work, since we ponyfill everything we need.
