[CI] Make CI logs less verbose

What does this PR do?

We don't really need verbose output when running the tests. There are too many tests to go through the logs individually, and the failures are reported at the end anyway. Removing to make the CI logs less noisy. Similarly, we don't need to disable output capture with -s since this is more for debugging.
