🐛 Fix versions in examples

Just a small fix. The modules have replacements, they don't need versions.

Update the release script to update all versions of mcr and below in providers and examples.

I wouldn't do this to be honest. Sure, it works, but we update those references on purpose during the release process so that the examples are more usable (once you drop the replace part). This makes it just less copy-able.
