[ownership] Update ownership transfer documentation

Update the ownership transfer documentation.
- Include a diagram of ownership state transitions.
- Add a high-level description of the ownership configuration.
- Describe the uses of the `update_mode`.
- Update struct definitions to reflect the current implementation.
