CMake also includes C by default, we don't need it.

Closed for now, C seems to be necessary for dependencies that provide C headers, even though we compile them with a CXX compiler. |

CMake also includes C by default, we don't need it. This came up in spack/spack#47662 (comment).
The previous form was apparently introduced in 2018 in b17feeb and looks like a provisorium, so we should maybe change that now.
