Looks great, @christopher-angel. Thanks for the contribution.
I added a couple tests with an example catalog extension showing marshalling/unmarshalling with JSON. If you agree those look good, please merge.

Adds support for extensions on
Catalog.The implementation here is meant to follow the patterns already established for
CollectionandItem.
