This PR is a follow-on to #322 to add docs for the Custom OAuth functions, as well as hopefully fix the site build. It looks like the workflows have been failing to acquire a runner: https://github.com/rstudio/rstudioapi/actions/runs/20865249395

Likely because there aren't ubuntu 18 runners anymore. So this PR also updates the workflow to use ubuntu-latest.

Also add setGhostText to document manipulation and getMode to version info section.
