Changed /etc/squid/, /var/log/squid/, /var/spool/squid/ references to squid3 in line with current implementation.
Changed volume mount point to squid3 instead of squid

Quickstart info still refers to various 'squid' dirs which I have updated to 'squid3' as per current implementation.
Minor gotcha when I went looking for the logs etc!
