fix(Android, Stack): Add fallbacks for missing DecorView insets

WIP - I'm assuming that, when the app is backgrounded, the activity is destroyed and we have some race condition between creating a new activity by the Host and recalculating the layout. I'm opening it as a draft for testing because I haven't been able to reproduce the exact scenario on my end yet.
