tests: increase OPA assert timeouts

Description

Latest weekly tests fail while waiting for the OPA Daemonsets to become ready.

It is worth knowing that the weekly tests require 10 nodes to run and this obviously puts a strain on oci.stackable.tech.

I fear this is because the k8s nodes is out of cpu/memory or something else. But let's give this a try
