The example notebook is super useful. The changes incorporate a few additions to reproduce the notebook as a new user.
Description
Minor changes to indicate that it needs to be run from src (unless user adjusts path settings), and also add the extension to get rid of the error ExtensionNotImplemented: Extension 'item_assets' is not implemented on object.STAC producers can add the extension using `obj.ext.add('item_assets')
