This guide now depends on just vanilla nvim v0.11 and should be much easier to maintain going forward

Breaking these commits out of #1001 so that they can be merged now.
This updates the neovim documentation to align to v0.11, allowing for a (very!) minimal example configuration that does not require any plugins. This also removes the nix-based example, which I'm no longer maintaining and as highlighted by #1005, is very broken!
