Looks good to me - just have a couple comments, see below. Thanks for doing all of this!
Only comments are:
the _modern suffixed app templates don't match the ones we ship;realizing this is part of theos/templates#31- it may make more sense to rename the legacy versions with a suffix and keep the "modern" versions as generic names

Update the NIC documentation to match changes in https://github.com/theos/templates
Specifically, these docs are intended to match what NIC should look like after theos/templates#31 and theos/templates#36 are merged.
Additionally, (considered part of theos/templates#36) this PR adds a section for the new https://github.com/theos/templates-legacy module.
