Compose v2 no longer uses it and triggers a warning when encountering it.
The YAML merge key ("<<:") doesn't extend lists, it replaces them -- so this is
a bit redundant.
It's helpful for troubleshooting.

Remaining tweaks from former #32. Hopefully nothing contentious here — I consider the Debian envs temporary until we've resolved a way to add packages to the containers outside of the tests. More on that shortly.
