Version bump, changelog, contribution metadata

[muffato]

Version bump (0.7.1 → 0.8.0) and changelog update.

I regenerated both CITATION.cff and ro-crate-metadata.json using the central scripts. The two files are now in sync with the Nextflow manifest.

I also added you, @yumisims , to the list.
